What I Ate Wednesday 6-4-14

This week, I turned 30. I know, it’s crazy.  I still feel like I’ve stolen my parents mini van and I’m driving around 3 kids that aren’t mine.  Sometimes I really can’t believe this crazy life is mine!

The amazing thing about turning 30 is…..I DON’T FEEL A DAY OLDER.

I’m not sure if I thought I would feel different or not, but I feel like society in general tries to create anxiety for women in particular about age.

I’m the oldest I’ve ever been (I mean, true story.) But I feel healthy, beautiful, strong, and free, something I couldn’t always say about my 20’s.

So yeah, 30 is gonna be great.  Here’s to the next decade!

Today, I’m packing up and heading to Nashville for a fun birthday weekend with the hubs, so my actual birthday (on Monday) was a pretty regular day.

Andrew worked, so I my normal day with the kids.  I said the cliches, “It’s mommy’s birthday, so don’t whine, ok?” “Let’s not fight on mommy’s birthday, k?”

Yeah, it didn’t work. In fact, it just made them more confused because there wasn’t a party.  Not on MY account though. I LOVE parties. I mean a surprise would have been cool…..just sayin 😉  30 is a big deal, right??

Anyways, I did what I could at my house to have a great day.  I was too lazy to figure how to bake a gluten free vegan cake, so I made these Cinnamon Drop Biscuits.  We made biscuits the night before for our Pot Pies, so I used that mixture, added some Coconut Palm Sugar, vanilla, and an icing glaze.

Yes, I ate too many. No, I had no self control.  Don’t model after me 😉

Back when I ate fast food for almost every meal, I stopped many mornings at Bojangles to get their cinnamon biscuits.  These were very similar in my opinion, without the “blah” aftermath.  In fact, Andrew said they were better! (He finished them off when he got home from work.  See, HE couldn’t stop either!)

I was planning to take myself (and all the babies) to lunch, but at the last minute a friend called me, and we went to one of my favorite places, DiChicko’s.

It’s hard to tell, but this is a LOT of food!  It comes with brown rice, black beans, tomatoes, grilled onions, grilled veggies (brussel sprouts and broccoli), avocado, and an awesome “white” sauce made from their marinade and Vegenaise.  This dish typically comes with provolone cheese and chicken instead of the veggies, but they work with me to make this “vegan.”  I’ve had this the “normal” way and it’s amazing too (back before I was doing a vegan trial), but the veggies just take it up a notch for me!

In the afternoon, I took a nap, and attempted to make cupcakes.  They turned out more like muffins, so I went with it, and ate too many.  I mean, I only turn 30 once, right?

These are Chocolate Chocolate Chip Muffins (vegan, egg free, dairy free, soy free, and gluten free). Oh. my. goodness. They are wonderful! I’m sure there will be a recipe somewhere in here!

For dinner, we had one of my favorites (which I’ve shared before). I literally cannot get enough of these Buffalo Cauliflower Bites. I of course made them gluten free, and adjusted a few things (which I will share in the coming weeks.)

We paired this with a side of Ranch dressing (dairy free, egg free) and a salad with Sweet Jalapeno-Lime Dressing (recipe coming soon). I’m serious when I say that I could eat this at least once a week!

We had another night of writing for the McKenna & Phil Jr project we’re working on!  It was a late night, and so I snacked on the last of the cauliflower and another muffin.
