Watermelon Cooler

Sweet, sweet summertime.  It’s just a feeling.  A slow down in life.  A community feel.  Sand in our toes.  A beautiful time of year.

There’s something’ about that summer heat that makes us gather round, whether it be at the lake, a church picnic, or a grill out with friends.

To me, watermelon is a summer staple…frozen chunks in smoothies, homemade popsicles, and refreshing drinks like this recipe.

I love to serve this light, refreshing drink over ice and topped with mint.  It’s subtly sweet, and creates a nostalgic, warm feeling as you share with friends.

Watermelon Cooler
 
Ingredients
  • 1 small seedless watermelon, about five pounds, cut into 2 inch pieces (no rind)
  • 2 T raw honey
  • juice of one lime
Instructions
  1. Put all ingredients in a blender and blend until smooth.
  2. Chill for at least 2 hours or overnight.
  3. Serve with ice and fresh mint!
