What I Ate Wednesday 4-9-14

This week I’ve been in Nashville.

The old dreams in my heart re-surfaced for sure.

But before you (and ME!) get too excited, I’ve got to tell you that it wasn’t under good circumstances.

We were there to celebrate the life of my 28 year old cousin, Ryan.  Despite some tragic circumstances, we had an intentionally beautiful weekend celebrating his bright, vivacious, and comedic life.

Death is a crazy thing.  It’s inevitable for us all, yet it always comes as a surprise.  Our brain knows heaven is literally a better place than earth, but our hearts can’t reconcile the loss.

I’m not ready to talk about it, as I don’t fully understand it.  But one day, I know I’ll put pen to paper and figure it out.

I debated on whether to have a post this week, but then I realized that there are many times in life where we travel for funerals, events, family gatherings, etc and have a hard time knowing what to eat!

In fact, I believe it’s so stressful for those of us REALLY living the CLEAN lifestyle that I’ll do an entire post on it.  Until that time, I’ll give you a glimpse into one day out of my home environment.

I purposely took my own breakfast because I had no idea what situation I’d be in. BUT I knew I was staying at a house, so I knew I’d have a refrigerator for my almond milk.

For breakfast, I had a bowl of this Superfood Cereal with Vanilla Almond Milk….I CANNOT believe this is the first time I’ve ever had it.  It’s AMAZING!   It has incredible ingredients AND tastes like chocolate. Pretty much a double score… (AND it’s Nut-Free for those who need that option!)

I also ate some fresh fruit from a big fruit bowl that was brought to the house, but I ate it so fast that I forgot to take a picture!

For lunch, we stopped at a place called Twin Peaks (like Hooters).  Ok, let me explain.  I was ONE of 8 passengers, all of whom have no special dietary needs except me.  All were guys except my mom and me, and we were outnumbered.

I’ll admit, I freaked out a little bit.  Not because of the boobs, but because of the food, lol! (I know, I’m a little backwards).

It’s traditional bar food, so I knew eating gluten free would be difficult. Plus we RARELY eat out at home because of our situation, so I’m not in the “real world” much.

So my research-mode brain kicked in.

Unless I’m at a restaurant that accommodates special dietary needs, I’m forced to figure things out. Here’s how I narrow things down so I can find something to eat:

  • I immediately go for the “sides” menu because it will typically have the most vegetable options. I will look for things like a sweet potato, green beans, broccoli, or steamed vegetables. I stay away from corn, since it’s most likely a GMO crop.
  • I personally stay away from meat & cheese, unless they use locally sourced or organic options. I do not like to eat foods that are treated with hormones or antibiotics, especially animal products.   Most big chains do not serve organic foods, so I knew I was going to be compiling a veggie plate today!
  • My last rule is to make the best available choice that I can. I will not and do not starve myself, BUT I make still good choices in situations like this!

So, what I went for was this:

Lunch

I got a side of potatoes and carrots, steamed broccoli, and green beans….I did not know that the green beans would come with bacon & corn, so I chose not to eat them (personal preference!).

Y’all may think I’m crazy, but I promise this filled me up.  I had a VERY filling breakfast, so I was not starving. When you eat REAL food, not processed foods, your stomach is filled up much quicker and you end up not needing as much food as you would if you ate processed foods (that can leave you hungry soon after and/or unsatisfied).

I was hungry a few hours later, and ate snacks then.  By this time, we were at my cousin’s house, and I knew I could count on her for some awesome snacks.  (She’s always got great stuff)!

If she didn’t have these, I would have eaten what I brought, but I was glad to have something different to snack on.

These are Raw Kale Chips and Raw Superfood cookies.  I ate about half of the bag of chips (only about 100 calories!) and one serving of cookies (which surprisingly is 18 small cookies!!! Wahoo!)

Later in the afternoon, we were going on a walk, so I ate some instant energy 🙂 This is an organic orange & some organic raspberries (thanks to my cousin’s refrigerator).  I ended up putting these in a baggy (yes, I said the word baggy!!) and snacked while we walked.

We were very fortunate to have a dear family friend bring us dinner. She cooked a spread (all by herself) for over 30 people!

Once again, I had no idea about the ingredients, but I made the best choices I COULD.

I was pleasantly surprised to see some WONDERFUL items on her menu.

This is a salad with veggies & vinaigrette, roasted green beans, rice medley, and kale salad.  Yes, I went back for seconds.

Dinner

I honestly didn’t even look at the desert spread.  I was more concerned with this glass of red wine.  It was nice to sit back and chill (we had no kids this night), catch up with family, and reminisce about our sweet Ryan.

I’m hoping this gives you a little direction and inspiration next time you travel.  It’s possible to not fall completely off the wagon, even in difficult circumstances.

I came home feeling wonderful, not sluggish or guilty.  And I still ate WELL!

 


What I Ate Wednesday 4-2-14

Well, I’ve joined the club.

I drive a van. I’ve got a kid in baseball. I’m busy.  I’m running around like crazy. I’m a “soccer mom” y’all!

McCall & Me

Of course that brings challenges to our lifestyle….normally I begin our 4-5 dinner meal plans around 3 pm each day…..Well now, I’m rushing around trying to get everything together to be at the ball field by 5:00 or so, and home after 7:30, with no dinners cooked.

It’s definitely been trying, but I’m slowly adjusting. I realized I couldn’t do it all without going crazy, so the nights where my husband is working, I’m paying our amazing babysitter to work on dinners while I’m gone.  Then all I have to do when I get home is help them eat, bathe them, and get them tucked up….Then figure out what I’m eating!!! Craziness 🙂

These days, my goal is to stick to my personal eating plan as best as possible. You can check out our Food Philosophy if you are wondering what that is.

It’s been harder to get as many greens & veggies in while on the go, so I’m trying to drink about 2 shakes each day (usually one for breakfast and one for an afternoon snack) to get more in!

This particular day, though, I ran out of greens and frozen fruit, so all I got was one….No worries, though…It’s all about balance 🙂

For breakfast, I made something out of what was left….and that made a TASTY smoothie!  This is frozen mango, frozen strawberries, spinach, water, and apple juice.

I had about 2 hours worth of errands to run, so I ate my favorite Cashew Cookie Larabar mid-morning.  These are one of the only “granola bar” type processed foods I eat because they are non-GMO and have a very small ingredient list….This one has TWO ingredients:  Cashews & dates.

For lunch, I had this Dill & Chickpea Salad with Rice Crackers.  I wasn’t extremely hungry, so this was all I needed (Now, I stop eating when I’m full), and it satisfied the sweet & salty for me!

I used this recipe from Oh She Glows, but tweaked it some.  I omitted the celery because I LOATHE celery (for now).  I also added Dijon mustard & Vegenaise so it had a “sauce.”  I used 1/2 teaspoon of dried dill and chopped pecans on top!  It keeps very well in the fridge, and is even better the second day!

I haven’t had time to make many desserts lately (such a crime!!), but I know myself & know I MUST have chocolate.  So–while I’m busy, I’m snacking on various products that I approve of, but this one was for today!  If you haven’t tried these, DO IT!

For dinner, I was on a mission to create an awesome Chili “Cheese Fries” recipe for our dairy free/vegan friends.  I used various recipes and combined them to make this!

Yes it was as awesome as it looks!  It’s potato wedges topped with chili and dairy free sour cream & semi-spicy nacho cheese!

This recipe will be coming soon.  This was our “meal” but it would make an incredible appetizer for a group or a gameday/potluck selection!

Since I shared my last peanut butter cup with my BFF, I topped the night off with a handful of Enjoy Life chocolate chips.

I really prefer to eat more veggies in the day, BUT it’s difficult these days to get it ALL done.  I do what I can 🙂

What I Ate Wednesday 3-19-14

Yesterday was awful. Just plain awful.  I needed a re-do today (which is really Tuesday) but still had some of yesterday on my shoulder when I woke up.

I hate when I do that.  Just drop it.  Get rid of it.  Man, it’s tough.

My mood usually defines what I eat, but I really, really have been trying to remain constant and not let food control me or let my emotions take over my desire.

What’s the best cure to a stressed life?  For me, it’s definitely plants (they give me some great energy and happy juice) and of course, chocolate.

You’ll see lots of greens today.  And guess what? I was happy 🙂

I always start my day with lots of water.  Lemon water if I can.  It helps get digestion movin’ and grovin’ first thing.

After my water, I had this Tropical Green Smoothie.  It’s got mango, pineapple, goji berries, flax seed, banana, coconut water, orange juice, and spinach.  Minus the spinach, this is a beautiful pink-ish color.  But it’s St. Patrick’s week….GREEN is awesome 😉

I drank this later in the morning because I was alone with a sick child, so watching Netflix on the couch took precedence over an early breakfast.

After I drank this, it was nearly lunch time, but I waited as long as I could to indulge in one of my favorites.

Collard Wraps

I pretty much think Collard Wraps are where it’s at…really! (ok, mom–I apologize for everything I ever said about your vegetables!)

I had some local collards in the fridge, and they make perfect wraps….You don’t even have to do anything but cut the rip out on the end!

For these, I used some leftover red pepper sauce I made the night before, sprouts, avocado, tomato, and zucchini. The picture shows my husband’s wrap–I added some organic, free range grilled chicken to his.

I’ve been craving SPRING, and since it’s not happening around here lately, I made pasta salad instead.  It pretty much did the trick.  Check out our gluten free recipe here!

After lunch, I ate a chocolate macaroon.  My first time eating macaroons.  WHY?! They are awesome!

Ok, I had this awesome idea of more wraps for dinner.  This time, I wanted to try my favorite Spring Rolls, just with ingredients I had at the house.

I put everything I wanted on them. I might have gone a little crazy. (zucchini, bell pepper, carrots, green onions, toasted sesame seeds, avocado, kelp noodles, edamame, fresh mint, spinach, and sprouts)

More like a Spring Roll hot dog.  It wasn’t pretty.  And it was really messy.  But I promise, it was delish.

The Asian Kale salad? Not so much.  I LOVE kale, so that wasn’t the problem.  I just wasn’t fond of the dressing I made.

For dessert, I had another macaroon.  And called it a night!

What I Ate Wed 3-12-14

You’ll never believe that we all slept in until 11:30 am today (Tuesday).  Really, it was monumental.

Here’s how it went down.  I got up and got the oldest off to school, got the babies formula and medicines.  Beckham wouldn’t stop screaming, so he went in to lay with his daddy.  They both fell asleep, and Sawyer fell asleep in time-out, so I went back to get in the bed, and I fell asleep.  And no one woke up until 11:30.

Whew!  All of that to say, I have no breakfast picture!  We slept right through it, and I’ll take that.  It was awesome.

So, we start with lunch.

My mom gave my husband an awesome Panini Grill for his birthday, so we tried it out.

After two uses, we know it’s incredible & will make life much easier! It also has flat plates that can make a griddle.  I’m so excited!  No more waiting forever to cook ONE pancake at at time!

This is our signature sandwich with Ezekiel Sprouted Bread (which DOES contain sprouted gluten–if you’ve followed my story, you know my body can digest sprouted gluten very well, so I eat this in a pinch), spinach, tomato, avocado, cheese (we were out of goat cheese, so this is Organic Raw cow cheese which we eat VERY sparingly), hummus, Vegenaise, and Dijon mustard. I paired this with organic strawberries (which taste AMAZING by the way!)

We were actually running around like crazy today preparing for another out of town trip, so I didn’t have much in my fridge!  I didn’t even have the ingredients to make a smoothie!

I hate to admit it, but my afternoon pick me up didn’t come from my green smoothie today.  Candy had to do the trick.  But not your regular nasty candy.  The good stuff.

If you have a sweet tooth & need a candy fix, try this brand Surf Sweets (found at Earth Fare).  Sugar is sugar, but this candy is organically certified and non-GMO certified.  There are NO artificial colorings or flavors.  This is a great alternative for Easter baskets and special treats!

Andrew and I had lots of errands, so we stopped for dinner at Farmhaus. I love eating here because I can still stick to my normal plan!  I had an Organic in-house-made veggie burger on a homemade gluten free bun with some toppings (local lettuce, local tomato, grilled onions, and mustard). Yummo!

If you live in the Augusta area, definitely keep this as a great option to eat out!

After dinner, our date continued at Earth Fare to get groceries (any chance to grocery shop without kids, and I’m in, even if it means that’s our date!).  We had fun walking around & picking out foods!

I knew I wanted a treat, and was trying to make a better choice than the Bakery, so I picked up this little tart.  Wonderful ingredients!

I actually prefer days where I’m eating mostly salads and smoothies, but some days, it just doesn’t happen.  But, no matter where I eat, if I’m on the go especially, I still try to make the best choices I can make in that moment!

This was a different kind of day, but I love when you get insight to all kinds of days, not just the ones full of salads and days at home!

What I Ate Wednesday 3/5/14

Ok, I have to confess that Monday & Tuesday were kinda bear bones around here.  We lived it up on our trip to Asheville (we deserved some pampering, right?), but coming home sure wasn’t easy.

I vowed to use what we had at home to make meals this week, relying on creativity and sheer willpower to create edible meals!!!

It’s certainly a great feeling when you really do achieve that goal…..and makes me think I should do this one week a month to clean out the pantry!

I started my morning with Traditional Medicinal Echinacea (Immune support) Tea. And you better believe I was dreamin’ while I was sippin’.  After our Asheville trip, my wheels are turning 🙂

I didn’t have any almond milk or anything to add to my smoothie really, so I decided to use leftover chilled green tea, and thus, this Green Tea Berry Smoothie was born!

I still had leftover pancakes from my post on the Blueberry Banana Pancakes, so I enjoyed a few of those later in the morning.

For lunch I had to make-do with what I had….the only greens I had left was spinach, so I topped that with candied sunflower seeds, goat cheddar cheese, and Orange-Almond Dressing that was left in the fridge from before the trip.

Later in the afternoon (about 4 pm), I finished off the rest of the smoothie (since it feeds 2 & I had no one to share with!). I forgot to take a picture of it, so here’s the repeat 😉

It took me a while to figure out what to make for dinner given what we had…But I finally settled on a BBQ Bowl. I had various kinds of rices in the pantry and a bag of frozen organic broccoli and all the ingredients to make a sauce.  I came up with this Broccoli BBQ Bowl topped with homemade ginger-molasses BBQ sauce and caramelized onions!  It had a lot of heat, but WOW it was good.  Andrew thought the broccoli combo was a little weird, but I really liked it.  And hey, I didn’t go to the store!!

All that heat from the BBQ sauce MADE me want something sweet (funny how that is, right?!).  I didn’t have much to make anything, but I still had these little treats in my freezer, so I finished those off.
