This Avocado BLT sandwich is so, so simple. But it sure doesn’t skimp on flavor.
I have to admit that when I first became a vegan, the one thing I missed was bacon. After a while though, that craving lifted–and once I started making this coconut bacon, I really haven’t missed it at all.
To me, the coconut bacon is the star of this sandwich. It’s smokey, crunchy, and slightly sweet. AND it adds an incredible texture to this sandwich.
To make this sandwich, you just need a few simple ingredients, just make sure you’ve pre-made the coconut bacon! I store mine in the freezer so it’s super simple to throw on salads, baked potatoes, or sandwiches.
You can serve these sandwiches on hoagie rolls, or even as sliders for smaller portions for appetizers or finger food. I imagine they would be perfect for football season!
- 1 batch coconut bacon (recipe linked in blog post)
- hoagie rolls
- vegan mayo
- sliced tomato
- sliced avocado
- green leaf lettuce
- Put desired amount of vegan mayo and mustard on the rolls.
- Layer sandwich in this order: lettuce, tomato, avocado, coconut bacon.
- Serve with chips or fries and pickles. Enjoy!
